These are NOT quick cinnamon rolls but they are yummy. They would make a great Christmas morning breakfast. You can make them the night before and bake when you roll out of bed. You and your family will love them.
Day 1
Preparing the bread
2 tsp yeast : 1 pkg
1/4 c. water : (warmed to 105-110 degrees)
Dissolve yeast in the warm water. Use the large mixing bowl from the mixer.
1 C. lukewarm milk
5 T + 1 tsp sugar
5T = 1 tsp Oil
1 1/2 tsp baking powder
1 tsp salt
1 egg
1 1/2 c flour
Stir milk, sugar, oil, baking powder, salt, egg and 1 1/2 c. flour. Mix in mixer for 2 minutes until batter is smooth. Change to the dough hook on the mixer
1 3/4 c.-2 1/4 c. flour
Mix in enough flour to make the dough easy to handle. The dough should attach around the dough hook and sides of bowl should come clean. After kneading dough in bowl, remove dough to lightly floured board.
Preparing the Pan
1/2 c. brown sugar
1/4 c. butter
2 T corn syrup
Hear the brown sugar and butter until melted. Remove from heat. Stir in corn syrup and mix thoroughly. Grease 9″ x 13″ pan. Spread mixture on bottom of pan evenly. (you may double this amount if you like very gooey and sweet cinnamon rolls )
Preparing the cinnamon rolls
Melt 2 tsp butter, set aside.
Mix together 1/4 c. sugar and 2 tsp cinnamon, set aside.
Roll dough into a 12″x10″ rectangle. Spread melted butter evenly over bread with a pastry brush. Sprinkle cinnamon sugar mixture evenly over the bread. Roll up dough beginning at the 12″ side. Pinch edge firmly to seal. Stretch roll to make even even. Cut into 12 1 inch slices using a very sharp knife or thread. Place slightly apart onto the prepared baking pan, laying on side. Cover with plastic wrap and Refrigerate 12 hours but no longer than 48 hours.
Day 2 or morning .
Heat oven to 350 degrees. Remove plastic wrap. Bake until golden brown, 30-35 minutes. IMMEDIATELY invert pan onto parchment paper or cutting board or platter to serve.
Optional Glaze:
Mix 1/2 c. powdered sugar, 1-2 T milk and 1/2 tsp vanilla until smooth.
Drizzle over baked rolls.
