Tis the season for baking, cooking, and entertaining. I love to do all three and keep healthy in mind when I do. At Gorski Wellness, we have many favorites recipes. I’d like to share a few with you today and wish you a Happy Holiday Season.
Butternut Squash Pear Soup
- 1½ quarts Chicken broth
- 2 ½ pounds butternut squash, peeled, seeded in 2 inch pieces
- 3 Bosc pears, peeled, cored and quartered
- 1 large onion, chopped
- 2 medium shallots, peeled, chopped
- ¼-1/2 teas. Nutmeg
- ½ c. half and half
- Salt and pepper to taste
- 6-8 T sour cream (optional)
In a large pot heat the chicken broth. Add squash, pears, onion, shallots and nutmeg. Bring to boil. Reduce heat and simmer 30 minutes or until tender.
In a Food processor or with an immersion blender puree mixture, in small batches. Put back in pot if from food processor. Stir in half and half, salt and pepper. Cook over low heat just until hot.
Serve with dollop of sour cream or croutons if you like.
Baked Sweet and Savory Mashed Potatoes
- 3 1/2 pounds baking potatoes, peeled and cut into 1 inch pieces
- 1 T salt, divided
- 1 29 ounce can sweet potatoes or fresh sweet potatoes – not sure how many, about 4-6 dependent on size
- 1 8 ounce package of cream cheese, softened
- 6 bacon slices, cooked
- ¾ c. sour cream
- 2/3 c. chicken broth
- ½ t pepper
Bring potatoes, 1 teaspoon of salt and water to a boil in a Dutch oven. Cover and cook 30 minutes or until tender. Drain. (If you are using fresh, add the sweet potatoes to the white and cook until tender)
Return potatoes to Dutch oven. Add cream cheese and mash until smooth. Stir in cooked bacon and next 3 ingredients and remaining 2 teas of salt. Spoon mixture into a lightly greased 11×7 baking dish.
Bake uncovered at 350 degree for 20 minutes. Garnish with other crumbled bacon if desired.
