Here are the recipes that I mentioned.
Favorite Appetizer:
Mushroom Palmiers
5 T Butter
1 pound fresh mushrooms, chopped
1-2 medium onions, finely chopped
3/4 teas. lemon juice
2 T flour
2 teas. dried thyme
dash Worcestershire sauce
salt and pepper to taste
2 sheets frozen puff pastry, thawed
1 egg beaten with 2 teas. water
In a large skillet melt butter. Cool mushrooms and onions over medium heat until soft and all juice have evapporated , stirring occasionally. Blend in Lemon Juice, flour , thyme, and Worcestershire sauce. Cook 2 minutes, stirring constantly. Season to Taste. Cool .
Spread half of mushroom mixture over each puff pastry sheet. Strating from short sides of pastry sheets, roll each short side towards the center. Press together. Transfer to ungreased baking sheet. Refriderate at least one hour until firm. (may be frozen at this point)
Slice pastry into 1/4 inch slices. Arrange on ungreased baking sheets. brush with egg wash. Bake in preheated 350- degree oven 20 minutes until golden brown. Serve warm.
Baked Sweet and Savory Mashed Potatoes
3 1/2 pound baking potatoes, peeled and cut into small dice.
1 T salt, divided
1 29 ounce can sweet potatoes in syrup, drained and mash ( I use fresh sweet potatoes and cook them with the white potatoes )
1 8-ounce package cream cheese, softened
6 bacon slices, cooked and crumbled
3/4 c. light sour cream
3/4 c. chicken broth
1/2 teas. pepper.
Bring potatoes salt and water to cover to a boil in a Dutch Oven. Cook 30 minutes or until tender. Drain.
Return potoatoes to Dutch Oven. Add sweet potatoes now if you are using canned. Add cream cheese. mash until smooth with a potatoe masher. Stir in bacon, next 3 ingredients and remaining 2 teas. salt. Spoon mixutre lightly into 11 x 7 ” baking dish.
Bake uncovered at 350-degress for 20 mintues. Garnish , if desired, with bacon!!
